Came across something interesting about Taro recently. Saw Micheal Saylor hype it at a conference. What's everyone think about this? Could it really mean the end for stablecoins on other chains?

Totally agree. A controlled DeFi environment might help. A solid approval process could prevent a lot of chaos in Taro/RGB.
