I’ve never done this before and it seems complicated, but I’m eager to learn. By 'not money oriented', I mean I want to help those struggling to survive on low incomes. That's the main idea.

You seem to be missing my point. Helping is great, but you want to create a charity without really knowing the ropes. Getting involved with an established charity will give you valuable experience.
