We kinda went off-topic, but I’m enjoying this chat. A 2-of-2 multisig needs way more backups than a 2-of-3.

You can encrypt the.psbt file via something like VeraCrypt. Moving files this way keeps things tidy. Bitcoin Core should not expose your addresses, which I’ve mentioned before.

You could stick with your current workflow. Encrypt that USB stick too. It’s an extra layer of defense.
